What Is Pétillant Naturel? 

 Pétillant Naturel is an ancient and traditional process of fermenting an effervescent beverage. Pétillant Naturel processes were originally used in Limoux in the south of France in the early 16th century by wine-making monks. Directly translated, it means “sparkling natural”.

When fermenting a Pétillant Naturel, or “Pét-Nat” for short, the primary fermentation is interrupted; the semi-fermented must still containing yeasts and sugars is bottled. The must then continues to ferment in the bottle.

Pétillant Naturel processing is similar to Méthode Champenoise, but differs slightly as the Méthode Champenoise must is allowed to completely ferment before bottling (the sugars are all used up) , then additional sugar and yeast are added at the time of bottling to procure a secondary fermentation in the bottle.
